For a tender, caramelized roast, go low and slow with a cook and hold cabinet.. The low temperature roasting and holding produces breaks down the connective tissue and the gentle air circulation caramelizes the roast and seals in the juices for a superior prime rib. The cabinet is versatile and can cook much more, including turkeys, chickens, pork, veggies, potatoes...even desserts.
- Each CH comes with afield reversible doors, and is wrapped in 2" thich insulation.
- The CH1600U is able to hold (12) 12"x20" or gn 1/1 pans side loaded and half per cavity, or (8) gn 2/1 or18"x26" per cavity, with a 22.625" working height per cavity.
- Our CH holding cabinet can hold from 100°F to 200°F.
- The electrical of the CH1600U is 240 Volt, 60 hertz, 1 phase, 6200 Watts, 25.8 Amps and comes with a 6-30P power cord.
- The max temperature of the CH1600U is 325°F and isa bel to preheat to 160°F in a matter of 25 minutes.
