The low temperature roasting and holding produces breaks down the connective tissue and the gentle air circulation caramelizes the roast and seals in the juices for a superior prime rib. The cabinet is versatile and can cook much more, including turkeys, chickens, pork, veggies, potatoes...even desserts.
