Doyon's KDPR13 roll-in retarder/proofer is the workhorses of any large baking operation. It features even air flow to maintain the precise heat and humidity required for retarding/proofing. The KPDR13 accommodates roll-in bakery racks for easy product transfer. The retarder proofer operates to a minimum temperature of 36°F (2°C) degrees for retarding and automatically switch from retarding to proofing, from room temperature to 110°F (43°C) degrees.

- Doyon's KDPR ships knockdown, in individual panels, allowing for installation in all types of locations withouth knocking out a window, door or wall.
- Doyon's KDPR13 is designed to hold (3) Double Side Load, (6) Single End Load, or (5) Single Side Load racks.
- Our Doyon KDPR13 is equipped with (2) humidifing module.
- Doyon's KDPR is able to reach temperatures up to 110°F (43°C) and 95% relative humidity.
- Each unit is constructed of 20 gauge stainless steel from the inside out.
- The KDPR13 has an interior width of 29 3/4" and a depth of 133 3/4".
- Simple to operate touch screen control build eye level in the stainless steel door. Program your entire retarding and proofing cycle for the entire week at one single time.
- Each unit is fully insulated. Every wall incased in 3" thick insulation with 2" thick insulation in the door itself.
