Globe's GG48TG gas griddles with thermostatic controls allow you to set the griddle to an exact temperature. As you cook the griddle will automatically adjust to hold the specified temp. Ans, the 1" thick stainless-steel griddle plate and 30,000 BTU U-style burners mean no dead zones or hot spots, so food is cooked evenly across the surface.
