Product Details
Imperial’s 12 gal (45 L) capacity Pasta Cooker is engineered for durability and performance for fast-paced kitchens. Even heat using 105,000 BTU's (31 kW) is delivered through a large oval heat exchanger tube. A unique baffle design efficiently transfers heat into the water throughout the entire vessel. The exclusive water wash system removes starch evenly across the entire surface of the water and reduces foaming. The manual water fill can be adjusted from 1 gallon (3.8 L) per hour to 3 gallons (11 L) per minute depending on the specific need. The vessel is made of 16 gauge 317 alloy stainless steel. This "higher-than-marine-grade" steel withstands stronger concentrations of salt in the water for faster pasta preparation without boiling the water to compromise the flavor. The pasta cooker also includes a 1¼" (32) diameter drain, 4 inserts and and four adjustable legs.
