The Ultimate Restaurant Range 72β Series is a heavy-duty commercial gas range built to meet the high demands of professional kitchens. Measuring 73 inches wide with a 37-inch high cooking top, this range offers ample workspace for chefs handling multiple dishes at once. Constructed with a stainless steel front rail, front, and sides, itβs designed for durability and easy maintenance in fast-paced environments.
This commercial range includes four removable cast iron grates, with the rear grates capable of supporting up to 14-inch stock potsβideal for high-volume cooking. For added convenience and safety, it features two front-located manual gas shut-off valves, one on each side of the unit, along with a factory-installed regulator for consistent gas flow. Open top burners utilize a standing pilot ignition system, while the oven bases are equipped with battery spark ignition for reliable startup.
The 5-burner configuration includes two powerful Pyromax burners in the rear and three standard 33,000 BTU burners in the front, giving chefs the flexibility to tackle everything from simmering sauces to rapid boiling. A 36-inch charbroiler is also available on either the left or right side, featuring removable cast iron grates perfect for grilling a variety of menu items.
This model comes standard with two high-efficiency convection oven bases. Each oven operates at 32,000 BTUs and offers a wide temperature range of 175Β°F to 550Β°F (79Β°C to 288Β°C), controlled via a precision thermostat. The ovens include a porcelain enamel interior measuring 14 inches high by 26 inches wide by 24 inches deep, three racks with five position side rails, and a 1/2 HP motor with permanent lubricated ball bearings and overload protection. The on/off switch allows each convection oven to be used as a standard oven when needed.
