The Ultimate Restaurant Range 72” Series is a high-performance commercial gas range engineered for the demands of busy restaurant kitchens. Spanning 73 inches in width with a 37-inch high cooking surface, this unit offers exceptional workspace and cooking flexibility. Its rugged stainless steel front rail, front, and sides provide superior durability, making it a reliable choice for high-traffic foodservice environments.
Equipped with four heavy-duty, removable cast iron grates—capable of supporting up to 14-inch stock pots in the rear—this range is built for efficiency and ease of cleaning. Two front-mounted manual gas shut-off valves (one per side) provide quick-access safety controls, while a factory-installed regulator ensures consistent gas pressure throughout. The standing pilot system powers the open top burners, and the oven bases feature battery spark ignition for dependable performance.
This 5-burner configuration includes two high-powered Pyromax burners in the rear and three standard 33,000 BTU burners in the front, delivering the heat and versatility required for professional cooking tasks. This model is further enhanced with a 36-inch griddle top, available on either the left or right side. The griddle features a 1/2-inch thick cold-rolled steel plate and can be specified with either manual or thermostatic controls to suit various cooking needs—from searing and sautéing to pancakes and breakfast service.
The range includes two convection oven bases, each offering 32,000 BTUs and a wide temperature range of 175°F to 550°F (79°C to 288°C). The ovens feature a durable porcelain enamel interior measuring 14 inches high by 26 inches wide by 24 inches deep, with three adjustable racks and five-position side rails for customizable cooking. Each oven is powered by a 1/2 HP, 1710 RPM permanent split-phase motor with overload protection, permanently lubricated ball bearings, and Class “B” insulation for long-term reliability. An On/Off switch also allows each convection oven to operate as a standard oven when needed.
